Love these noodles! And here's tip for a little better texture: rinse under very hot water for a few minutes, then parboil per package instructions. Then bake them. It pulls out much of the excess moisture and makes them less rubbery and more "al dente". They still won't have the texture of wheat pasta, but this will get them closer. Bake at 325 for 15 minutes, then turn and bake another 15 minutes. Be sure to separate the noodles as much as possible on your cookie sheet.
