Just tried it last night after buying in -store last week. I was surprised at how good it was. My very picky husband and son ate it too and had NO idea it wasn’t the regular stuff. No comments about the taste whatsoever….and trust me, they are PICKY! I felt like I got a tiny hint of cardboard flavor every now and then, but it could have just been my mind. I served chicken alfredo over it, so that might have helped mask any bad taste. I recommend it if you really want some fast, lower-guilt pasta. 🙂

Another game changer from the Great Low Carb Bread Co.! I love their bread, and purchased the fettuccine in hopes of it being a good lower carb option for pasta. It is (IMO)!
It doesn’t taste *exactly* like pasta, but compared to all of the other alternatives I’ve tried (shirataki noodles, zucchini spirals, etc…) it is by far the clear winner.
In terms of taste and texture, it is like a very al dente, under-cooked doughy pasta. I think if I had boiled the noodles a bit longer, it would have had a softer texture, but I also didn’t want to take the chance of it getting too mushy.
If you enjoy pasta itself, then this isn’t going to get you that delicious wheaty replacement. However, if you approach pasta noodles as a vehicle for sauces and toppings, then this is perfect! I smothered the fettuccine in a homemade bolognese sauce, and I couldn’t really taste the doughiness of the pasta, but it provided excellent al-dente texture for the meat and sauce.
I just wish this wasn’t so expensive. I can buy twice as much regular fettuccine for about a quarter of the price, but I guess that’s the reality of a specialty food. On the plus side, there’s so much fiber in each serving, that you get full fairly quickly on these noodles. With regular pasta I always use a food scale to weight out a 2 oz serving of pasta and without fail get frustrated because I WANT MORE dammit! 2oz of this pasta is actually satisfying (although I find 3oz to be the sweet spot).

Wasn’t good. I followed the instructions on the bag but it seemed like the noodles were still hard. I cooked it longer and the texture still wasn’t cutting it for me. Tasted really grainy & at times hard.

I have tried a number of low carb pastas and I think this is the best one. I do cook it longer than recommended, about 12 – 14 min. I find it takes like regular pasta, but the texture does take some getting used to. It is very filling. I cook the whole package, then divide it into 4 equal servings and freeze the individual servings for later use. Just defrost in the microwave, which may even improve the texture a little bit. It is really satisfying with a good sauce.
